Whole Grain Cereal Party Mix

Need a party mix to bring to one of your family gatherings this month? I love having something like this on hand this time of the year. Here is a recipe from NOW Foods that looks so delicious. Enjoy! (Intro by Kathy Lambright)

Whole Grain Cereal Party Mix

Makes eight 1/2-cup servings

Ingredients
4 cups whole grain cereal (such as Multigrain Cheerios or Bran Chex)
2 cups puffed rice cereal
1 cup sliced or chopped NOW Real Food® Almonds*
1/4 cup NOW Real Food® Sesame Seeds*
1 cup NOW Real Food® Pumpkin Seeds*
1 Tbsp. sesame oil
1/4 cup soy sauce
1 Tbsp. Worcestershire sauce
1/2 cup Ellyndale™ Organic Canola Oil
1/2 tsp. chili powder
1/4 tsp. salt

1. Preheat oven to 300 degrees F. In a large bowl, combine first five ingredients. Whisk together remaining ingredients in another bowl.

2. Stir liquid into cereal-nut mixture.

3. Spread in a single layer on a 12-by 15-inch rimmed baking sheet and bake, stirring every 10 minutes, until golden, 30 minutes.

4. Store leftover party mix in an airtight container for up to a week.

You can swap in another type of multigrain cereal in this recipe, but be sure it’s unsweetened or minimally sweetened.

Pumpkin Spice Cookies

• 3 cups whole-wheat pastry flour
• 2 teaspoon baking soda
• 1 teaspoon sea salt
• 2 teaspoons cinnamon
• 1/2 teaspoon nutmeg
• 1 Tablespoon plus 1 teaspoon Apple Cider Vinegar
• 1 15-ounce can solid-pack pumpkin (about 2 cups)
• 3 Tablespoons Agave
• 1/2 cup molasses
• 1 cup non-dairy milk (ie. soymilk, rice milk, nut milk, or water)
• 1 cup raisins
• Chopped nuts, optional
• Canola oil spray

DIRECTIONS:
Preheat oven to 350ºF.
Mix together flour, baking soda, salt, cinnamon, and nutmeg.
In a separate bowl, combine Apple Cider Vinegar, pumpkin, Agave, molasses, and non-dairy milk or water.
Combine the two mixtures, then stir in raisins.
Drop by tablespoonfuls onto a baking sheet sprayed lightly with canola oil.
Bake 15 minutes, or until lightly browned.
Cool cookies on a wire rack. Store cookies in an airtight container in the refrigerator.

Apple Nut Crisp

Apples

Serves 7

Ingredients
5 cups sliced apples
¼ to ½ cup chopped walnuts or pecans
¼ cup unsweetened coconut meal [also called flour-grind 1/2 cup shredded coconut to make 1/4 cup of flour]
1 tsp. cinnamon
¼ teaspoon NOW Real Food® Stevia Extract*
½ cup plus 2 tablespoons rolled oats, lightly chopped in a blender.
6 tablespoons vegetable oil
¼ cup natural apple juice
A dash of nutmeg
½ cup barley flour

  1. Peel apples; peeling not necessary if they are organic.
  2. In a lightly oiled 8 x 8 inch baking dish place apples, then sprinkle with juice, nutmeg, and ½ tsp. cinnamon; stir.
  3. In a bowl, mix flour, stevia, ½ tsp. cinnamon, and oats, then stir in oil, walnuts, and coconut meal and spoon over apple mixture.
  4. Bake at 350 degrees in a preheated oven for 50 minutes or until apples are tender. To prevent over-browning, loosely cover with aluminum foil the last 15 minutes.
  5. Serve warm or chilled.
  6. Variations: Substitute whole wheat pastry flour for barley flour. For special events top with [vanilla] ice cream.

Raw Zucchini Alfredo

Serves 2

  • 1 zucchini
  • 1 clove garlic, chopped
  • 1 teaspoon sea salt†
  • 2 tablespoons NOW Real Food® Extra Virgin Olive Oil*
  • 2 tablespoons NOW Real Food® Pine Nuts*
  • 6 sun-dried olives or fresh, uncured green olives

For sauce:
  • 1 cup NOW Real Food® Raw Walnuts*
  • 1 cup NOW Real Food® Extra Virgin Olive Oil*
  • 2 cloves garlic
  • 1 squeeze of fresh lemon juice
  • 1 teaspoon freshly ground nutmeg
  • 1 teaspoon freshly ground white pepper
  • 2 leaves fresh basil
  • 4 or 5 leaves fresh oregano (or other fresh herbs)
  • 1 cup water
  • 1/2 to 1 teaspoon sea salt† to taste
Directions:
  1. With a peeler,† make ribbons of zucchini.

  2. Massage ribbons with garlic, sea salt and olive oil.
For sauce:
  1. In blender, add walnuts, olive oil, garlic, lemon juice, nutmeg, white pepper, basil, oregano, water and sea salt.
  2. Blend until creamy.
  3. Pour over zucchini ribbons.
  4. Top with pine nuts, olives and chopped herbs.
